The Bread Machine Gourmet: Simple Recipes for Extraordinary Breads, by Shea Mackenzie, Avery Publishing Group, USA, 1993. Sorry having a “senior moment” here the recipe states 200 ml water, 50 ml milk -but in the instructions there is no mention of when to add the milk. The recipes deliver high quality gluten-free breads that come as close to wheat in terms of taste, texture and appearance as any you are likely to find; they make tender loaves with the consistency of a homemade white bread and the rich taste of millet and sorghum, two ancient grains that more than make up for the lack of wheat flavor. Would be a much better book if it had metric or even weight measurements, although it does have a page showing volume-weight (imperial) equivalents. The freshly baked bread you make will look and taste great and you’ll be happy you’ve done your best to bake a better loaf for you and your family.

For example, one of the best if not THE best bread machine baking books, by Beth Hensperger, gives measurement equivalents on page 18; being American, it's cups to ounces, so I had to convert oz to grams!

This book combines the book above with a similarly-designed and illustrated book on traditional baking, so the notes above also refer to this book. I admit I’ve been somewhat lax in my creative uses of the bread machine, using it only to bake somewhat plain, whole loaves when I wasn’t up to or able to bake one entirely by hand. In case you have never measured dry ingredients (like flour) using a scale rather than a measuring cup. It was a bit dense and compact, but the bread itself is delicious, and oh, the way it made the meatloaf sandwiches taste!
